Can you use other cookie dough than Sugar and Gingerbread for frosting?

If so, do you have any suggestions? I would rather frost something like peanut butter or oatmeal chocolate chip. I have these great cookie cutters, but I'm sick of sugar cookies and ginger bread. I understand other doughs can be too sticky to use cutters on though. Any thoughts or suggestions? Thanks a lot!
 
I'm thinking you might want to consider a ganache to use as a dipping frosting or spread. I dip oatmeal raisins half in white chocolate ganache and drizzle with a thin dark chocolate ganache.
You can also make classic molasses ginger cookies and frost them with a cream cheese frosting that has a little lemon zest in it.
