Can you remove upgrades from the iphone 3g?

i have the iphone 3g and it's been working fine until i updated it to the 4.0 update and now sometimes i could be using it and the screen will freeze and some of the app wont open up anymore. when i'm listening to music and the screen goes off and i unlock it the music stops. all this started when i upgraded it. is there i was to remove the upgrade from the iphone
