Can you over-slow-cook beef?

I am cooking up some cubed stew beef in my slow cooker. What I did was brown the beef and toss it in the slow cooker with some sauce. The sauce I made combined two cans of condensed beef broth, two cups of sour cream, two tB of butter, and this dry french onion soup mix.

So I'm slow cooking it in that stuff. I usually do it for 6-8 hours but I'm thinking about doing it for 12 hours this time, on the low heat setting for my Crock Pot. Will 12 hours be too long? Or should I limit it somewhere? Any advice here would be great.
 
You need to practice slow cooking with the Crock Pot first, when you are home and not going anywhere, so you can watch how it turns out first.
 
Yes, you can overcook- slow cook beef. It depends on the beef. Some beef cooks faster than other beef. Depends on the tenderness of the beef you buy.
Cubes of beef would cook quicker than a chunk of beef.
I would cook it for the 6 hrs and then check it-- then again at 8 and 10 hrs.
Then you will know for sure when you want to do it again.
If beef is over cooked it turns to mush (my own experience) Good luck.
