Can you make sushi with fish you catch ?

I wouldn't. When you eat store bought sushi, it is sushi grade fish to where you don't have a chance of getting as sick. But just eating it with the fish you catch, you don't know what chemicals that fish has eaten that can get you sick. It would be best just to buy fish at the store that states you don't need to cook it, so like shrimp, crab meat, and other kinds of fish.

You people are really amateurs, aren't you? There might be fish that is better for sushi than others, but any fish can be eaten raw.
If what you say were true.. that raw fish is dangerous... why do Japanese people have the longest life expectancy in the world?

Number one. You can eat any fresh fish you want and eat it raw if you take reasonable precautions.
Number two. Oddly enough, freshwater fish has a higher likelihood of causing you problems with parasites.. and giving you nastier ones than saltwater fish. The obvious reason is that MAMMALS are more likely to eat freshwater fish, get it?
Number three. You are not going to get parasites. You will win the lottery before that happens.

So here is what you do. Filet the fish. Wash it carefully with clean water. Cut it properly and in the correct direction with the grain of the fish meat. Discard the parts that you do not want to eat. There you have sashimi. Eat it on rice and it is sushi. This happens every day in Japan, with a population of oh... more than 100 million... so if they were getting parasites every day, they would be dying like flies in December.
As a scuba diver, I can tell you that you can clean and eat a fish while swimming in the ocean. And why not? If it were dangerous, then how could fish and dolphins possibly live? You think that they have charcoal grills hidden somewhere"
By the way, if you have ever gone fishing in the oceans off of Hawaii, even the tourist boats will offer up sashimi minutes after a catch. No big deal.

Sheesh. If you think that fish must be frozen for weeks just to make it safe to eat, you are seriously seriously whacko.
 
Yes, as long as you use it as soon as possible while it's still fresh, otherwise you could get food poisoning or parasites.
