In days of yore I sundered peace and took mankind’s life’s lease. But spy me now through a looking-glass and to high tech labs we flee en-masse.

I think "looking-glass refers to a microscope. But im not sure.
 
Sounds to me like it means rats.

The Black Death, the eating of entire crops, etc.

Now they're used in laboratories and whatnot.

Yeah, I think rats.
 
I think it is germs or bacteria

They killed a lot back in the day
You look at them under a microscope
And it is safety, so good cleaning would be part of it
