Sure you can, but I would recommend you have a cooking day and carve up the turkey for different uses, like sandwich meat, stew, casseroles etc. That way, if you are tired after a busy day you have some easy quick meat waiting for you to heat up. I have had the same situation when my Mom gave me leftovers from Xmas last year. She bought it frozen, defrost, cooked it. I added chilled gravy, frozen vegetables and chopped leftovers and divided it into packages. I was eating chicken stew right into spring! I took another plate full of leftovers, chopped it up and mixed in cooked barley and leftover veggies and made uncooked meat pies. I was popping them into the oven for 30 minutes and adding gravy until May!!!
