Alton Brown just did a Good Eats episode about crawfish. He made something out of a cooler and a fish aquarium pump to keep crawfish fresh and alive for a few days. If you can find the episode online it might be what you're looking for if you're only looking at a couple of days or so. Otherwise, I think they need to be alive to cook them. I would cook them before freezing.
