Can specs tell me about how good a car is for the outdoors?

Subaru, probably Outback. If you don't want AWD then Toyota Rav4.

I'd like to buy a compact car, but I want to be able to put a couple kayaks on it and take it on some bumpy and possibly muddy backcountry roads. Compact cars aren't normally built for this and car reviewers don't tend to mention how they would handle on rough terrain. I'm wondering if I should pay attention to any of the following when choosing a car:

- Ground clearance
- Curb weight
- Torque
- Tread
- Tire width
- Traction control

Or anything else? I'm pretty sure I don't want AWD, but any other suggestions are much appreciated.
