can small modifications hurt mazda performance?

i have a 2001 mazda protege es 2.0 L. i have talked to a guy who builds race cars and he says that small modifications actually hurt mazda performance. i want to buy a K&N air filter, a 170 degree thermostat, and to remove my catalytic converter and put in a straight pipe. he says that this would hurt performance because the car was set to optimum performance in the factory. he says if u change things in the car it will tell the computer and it will take it out of its optimum performance. to what extent is this accurate. please only car guys and people who know what they are talking about answer this thanks.
 
Let me take your proposed modifications in order:
K&N air filter, this will not hurt a thing.
170 degree thermostat, there will be no performance improvement.
Removing catalytic converter, big performance drop. The Ecm will try to get the system to work right, and when it can not it may put you over into limp home mode. Yes there are ways around this, however I doubt that the time in prison and or fine is worth the supposed performance improvement if any.
