Can I reject an offer that the insurance company gives me on my stolen car?

I have had a 1998 jeep wrangler stolen. It was in immaculate condition. KBB values it at nearly 8000, while edmunds for some reason values it at a little over 5k. I do have an alternate means of transport, so I was wondering, if the company makes me an offer I feel is unfair, can do I have a right to reject it and have them make me another offer, or am I simply stuck with what they give me? Also, how long does that process take, and is there any website or document that shows my right in this situation?
 
How many miles did it have on it? If it's from 1998, it's gotta have a lot of miles on it. The more miles on it, the less it's worth.
I don't know, I guess you could try. You'll probably need a lawyer though if you're going to fight them and that'll just cost you the money you gain, if you gain any, from the insurance company.
