Can I cook rice, freeze it, defrost it, then eat it cold without reheating or

recooking it? I am planning on cooking rice, freezing it, defrosting in a fridge then eating cold (without recooking or reheating) purely to save time. Just wondering if it is safe?

I know that rice can contain spores of Bacillus cereus, and that if rice is left standing at room temperature, the spores will germinate into bacteria that can cause vomiting or diarrhoea, so this is a concern.

My common sense tells me that as long as I don't leave the rice at room temperature for a long time (over an hour) and instead freeze it quickly, then the spores won't be able to germinate into bacteria, and that it should be safe to eat once defrosted without reheating, but I would like to hear the opinions of whether it would be safe or not.
