I do not think that would be wise molds, fungus and botulism could occur.
you could jar it hot then close it and refrigerate it. the lid would create a vacuum when it cools and it will have been sterile when jarred.

this will not assure that no molds will appear as it sets in the cupboard but it will reduce the likelihood.
 
if you have any rum or vodka or whiskey you can put about ateaspoon on top of the salsa set it on fire and quikly put the lid on. the fire pulls out the oxygen and seals the lid. any liquor that you can set on fire will work. it will also burn away the alcolhol so if you dont want it you have no worries
