Can a potential employer check your past/current employment history?

A few weeks ago I quit a job I had for a long time, I put in my two weeks after I got a new job. My new job isn't what I thought it was going to be. I dislike it and plan on quitting but I would like to find a new job first. My problem is I don't want to list my current employer (i've been working there for less than a month) on my job application. It will look very bad on my behalf if I quit after 3 weeks. When potential employers ask me if I am currently employed I say "No". Is there anyway they can check?
 
I worked for an employer for a week and I didn't put it on my application/resume. I didn't find it relevant since it was only a week.

You can put it and let the potential employer know why you're looking for a new job. And give them reasons why your interests changed in your current job.
