If there's a chance it would be chilly this first night - I make up a batch of stew before we leave - put it in the cooler, right in the pot, and reheat on the camp stove or over fire (if you have the right step up). After the drive to the camp, and setting up, it's nice not to have to "cook" the first night. The family really enjoys something hearty. The rest of the weekend is typical camp stuff. A few fun things we've found:
Frozen sweet potato "patties" I found at the grocery store. Since they are frozen, they travel well and defrost by the time we need them. They cook up on the griddle real nice - good addition to any meal.
Kids like to make scrambled egg/omelets in a bag. Crack and egg or two in a quart size freezer bag, add a little milk (or water), and whatever else you like with your eggs (cheese, salt, pepper, cut up ham). The fun part - seal the bag, pushing out some of the air, and mash until everything is mixed up nicely. Then submerge into a pot of simmering water. Using tongs, gently stir the bags until the contents are cooked. Remove from the water and set aside until cool enough to open the bag and pour the finish egg "omelet" into your dish.
