Look for meals in the international aisle of the grocery store. There are often really cool thai and other noodle dishes. Get the thin rice noodles and they will cook quickly. The seasonings and sauces with it make it light and convenient.

You could also make your own pasta dishes. I like to get those instant pasta sides (with seasoning and all) and mix in some dried veggies, sundried tomatoes, canned chicken, and some cheese...really good and pretty easy.

If you wanna go all out, you can piece together all kinds of meals buy ordering single freeze-dried ingredients on the internet and pairing/mixing them with some lightweight/instant grocery store ingredients to try to recreate some of your favorite dishes.

I have to cook a dinner 6 days into a backpacking trip. It cant be the dehydrated premade meals. It also cant contain fresh potatoes or other perishable items because we wont be taking a cooler and cant be canned. It has to be a nutritional meal for 4. Any ideas?
