Camping and fishing near Seattle/Tacoma?

My girlfriend and I are looking for a nice place to hike, fish and camp in the Seattle/Tacoma area. Not established camp grounds or anything. More along the lines of "off the beaten path" kind of places. We realize we will need to travel outside the Seattle/Tacoma area as well. Anyone know of any good, remote, relaxing places?
