Depends on the budget & your families/friends diet flexibility. Servers usually cost more, but they make the guests feel more elegant. I mention the diet because you have the conflicts with all the different types of vegetarians, lactose intolerant, other diet specifics that may cause a headache for meal choices.
Buffet is the way I'd go because then the guest can control their own portions/options and it makes for a great mingling time. My cousin even left all the seating open so we'd be in our comfort zone. It was an amazing wedding and it still was classy. We just didn't feel like we were at a red carpet benefit dinner, but that's ok, it's about your day.
