Indeed .es is for Spain, but having such a domain doesn't mean the tracker is on that language or even hosted in that country. Animebyt.es is on a Canadian server, for example.
You are absolutely correct.
(I would move to Canada if I could. Music is not illegal to share. It's too fricking cold though!)
There are many others, like -
TNetwork.ath.cx. It is a German tracker (also open, but I didn't like the WOT rating, so didn't join), but sometimes the ath.cx is used for Hungarian sites too.
