Yes's version of Paul Simon's America, in my opinion.

Pretty much every Nirvana cover kicks ass.

The Who, Rush and Blue Cheer have all done some kickass versions of Summertime Blues.
 
i love the Whos version of Under my thurab but my two favourite covers are Hendrix's All along the watchtower and Frank Zappas reggae version of Stairway to Heaven - i cant stand the original cos ive heard it so many times so its nice to hear a different version for a change
 
im probably going to be murdered for this, but i think atreyu did a decent job covering "you give love a bad name" by bon jovi.
