I'll start with soundtracks, then. I'm a bit of a soundtrack geek :o My favourites are:

Almost Famous, Romeo + Juliet, Pulp Fiction, Garden State, High Fidelity, Juno and Cruel Intentions

My favourite film score I think is American Beauty

Pulp Fiction, Kill Bill and Death Proof all have fantastic soundtracks (one of Tarantino's greatest points), others would be Romeo and Juliet and Cruel Intentions (already mentioned). I also think Watchmen is pretty good.

Some fantastic scores also for Amelie, The Lord of the Rings (probably the best ever, imo, Shore did a truly sublime job) and Gladiator.
 
I love the musical score from Aliens !! the atmosphere on that film is realy dark anyway and the music is just so brilliant (in fact if i recall it has been used in other films at times of intense drama)
