I like the soundtracks to 10 Things I Hate About You, Sweet Home Alabama, 50 First Dates, Practical Magic and Rocky Horror (classic).

Anything else by John Williams.
 
None of you have mentioned Forrest Gump, criminal!!!

The double-disc soundtrack is absolutely blinding....Elvis, Simon & Garfunkel, The Doors, Mamas & Papas, Bob Dylan, The Beach Boys, Aretha Franklin, etc. etc. etc.

Also, lets not forget Vangelis (Chariots of Fire & Bladerunner....again, superb!)
 
i agree John Williams creates great music and some of the best soundtracks.

I also really liked the Garden State Soundtrack. Some really good music on it.
