best diet and exercise to build muscle?

I am 128 pounds. My plan is to get down to 115 pounds, then I plan to start doing full body workouts and pilates to gain muscle. I would like to gain around 5-10 pounds in muscle (which would bring me up to 120-125). PURE muscle. So I was thinking I obviously need to eat lean proteins like chicken and tuna. I figured, 80% of my diet could be raw fruits and veggies, and the other 20% lean proteins. And not eat dairy or breads and pastas or anything. Dairy is just bad for you, and the only benefits of breads/pastas I am aware of is carbs, which I'd be getting through fruits and veggies. I don't have too much fat on me right now, and when I get to 115 I wont have much at all, so I'd be building muscle, rather than turning fat into muscle. So, when this time comes, if I continue my cardio everyday, and add a full body pilates work out everyday, plus a few isolated muscle exercises every other day (to tone my legs), is this a good diet to gain muscle without gaining fat? If not what is a good diet to achieve that? Is it a good exercise plan to gain muscle? If my plan seems faulted in anyway, please let me know. Thanks!!!
