Without question Seven Samurai and Rashomon are two of the greatest movies ever.
I also enjoyed Chinese ghost story. Sorry I don't have more recent recommendations!

I absolutely loved the tv series Condor Heroes when I was younger and it's worth checking out. Brilliant theme tune as well!

Taegukgi - probably my favourite war film ever, it's Korean, often called Brotherhood.
Oldboy - nice stylish, dark, action thing. Again, it's Korean and part of a series.
A Bittersweet Life - very stylish, dark film. Hmm, Korean again.

If you like psychological horror, then Korea, Japan and to lessor extent, Hong Kong and Thailand produced a load of top quality horrors in the past decade. For those, check labels like Tartan etc For example, A Tale of Two Sisters.

Definitely A Tale of Two Sisters, brilliant film. And the war film mentioned too.

Akira Kurosawa(the ones mentioned already), plus Throne of Blood, and High & Low are fantastic too.

Try some Takashi Miike films too, I recommend Rainy Dog, The Bird People in China, Sukiyaki Western - Django, and Ley Lines.

Sympathy for Mr Vengeance
Oldboy
Sympathy for Lady Vengeance
A Bittersweet Life
The Good The Bad The Weird

Seven Samurai
Ring
Ju-on: The Grudge
The Eye
Spirited Away (animated)

I've never seen this one myself but Ugetsu Monogatari is considered by some to be one of the greatest films ever.

I HIGHLY recommend the following 2 films. They're guaranteed to put you in a good mood. Both are Japanese comedies:

1) Swing Girls (2004) LINK

2) Waterboys (2001) LINK

Oldboy, Lady Vengeance, Battle Royale, Black Kiss, The Police Story Series and Ichi The Killer for some good mindlessness.

Surprised no one has mentioned "once upon a time in china" (Jet Li). If you like a bit of comedy with some great fight scenes then "Armour of god" (Jackie Chan). Most of Jackie Chans early stuff is very watchable.

There is always one of the first kung fu films I saw "Incredible kung fu mission".

However I would guess you have seen this films.

Battle Royale
Ringu
Studio Ghibli animes
Shutter
Crouching Tiger Hidden Dragon

Has anyone seen the Good, the Bad and the Weird? I haven't seen it yet but the trailers looked quite good!
