Belly pork and other cheap cuts of meat are sold as sophisticated dining, isn't this

a big con? When I was a student these cheap cuts of meat were staple fare .I'm amazed to see belly pork,breast and neck of lamb ,offal, oxtail etc. in expensive restaurants and gastro pubs at inflated prices. Personally I wouldn't pay these prices knowing what the stuff is, they are getting huge profit margins fooling Joe public that he's having a fine dining experience.
