I hate to say this but... A Barramundi ONLY eats live food. No matter what you try once they are big enough to eat small fish, they would rather starve than eat 'dead food'.
I cared for our store pet Barra for many years. At times we struggled to get live food for her and had to resort to some desperate and expensive fish/ crustations as food.
I hope you have a really big tank. Your boy is going to get to over 1 meter. And if you leave it too long he will die from shock if you move him after he becomes a she.
Ours was about 15 yrs when she died, and close to 1.2meters or 4ft when she parted company with us.
Her tank was just over 8ft x 2 1/2ft x 2 1/2ft.
Even though we specialized in Australian natives, Barra's were something we didn't stock very often, and they were never sold to people who didn't have large tanks. Also if people were reluctant to feed live food we pointed them to perch and bass in preference.
Barra's are a massive comitment.
So unfortunately there is really nothing else you can try other than something like raw prawns or whole white bait. You need to be creative in wiggling them at the top of the tank to convince your barra it is alive.
