You've got to remember that there are many different timelines in the films each caused by Marty's actions. After 1950s Biff is given the almanac in BTTF2, Marty (who has already humiliated Biff and trashed his car in the first film's timeline) steals the book. Now if somebody stole a book that could make me billions I would be furious.
Money changes people. I think its acceptable to think Biff's personality would change under the circumstances. Marty pushed Biff over the edge.
I'm almost certain he knew Lorraine's name in the original film. And I don't understand what you mean 'by getting revenge on George'. Without the money (in the first film) he was humiliated by George and made to look like a laughing stock. It was only when he got the money that he was able to regain his confidence, get revenge and kill George. He only did it because he could get away with it, he's power hungry - he owns the police!
