B&W photos with digicam, is there a difference in camera than out of camera?

I do have some knowledge already so experts only!

The question is will I achieve better resolution by taking the B&W photo with the option switched on in the camera at the shot time? Technically it's feasible that it would because the individual RGB sensors could operate in a brightness only mode and the interpolation (bayer?) that occurs to produce a single full color pixel isn't required.

So is that how a 'typical' camera would operate or does it take a normal color picture and then convert it in the same way external software would?

(and perhaps sensitivity is improved too?)
