Austrian Cheese Spread

Made this a couple of days ago. It is quick, easy and delish. Next time I
might add a smidge of crushed scallion to it just to see what it does to
the flavor. This time I made it exactly as the recipe stated. I used
pumpernickle bread but next time I think I'll try a different bread or
perhaps a dard bread type of cracker.

8oz cream cheese softened
1/4 cup toasted pumpkin seeds
2 tablespoons finely chopped
1 tablespoon pumpkin seed oil
1 1/2 teaspoons Dijon mustard
Salt and freshly ground pepper

Blend the cream cheese with the fine chopped pumpkin seeds, the pumpkin
seed oil and mustard and season with salt and pepper. Top with the whole
pumpkin seeds and serve.

Well, I'm happy to see you even if it's for a short time.

Starting now until maybe the middle of May, I'm working my
butt off in the garden, too. I hope I have as much success with
tomatoes and cukes this year as I did last year, and I hope we
don't have awful heat and drought again so I get nice flowers
for all that work.

Today I planted flowers that were purchased as part of a fund raiser for
a friend who does animal rescue. She does this every year. Soon I'm
going to run out of places to plant this stuff. Today I planted tall
phlox (3), Astilbe (6) and Lilac Time Dahlias (6). I have gladiolus
bulbs to plant but I don't know where I'm going to put them.

I've only recently heard that pumpkin seeds can be substituted for
pignole nuts.

Today's mighty oak is just yesterday's nut that held its ground.

Hah, I know what you mean. I buy bulbs from a friend's kid to raise
money for soccer. I don't really need *any* more.

Ooo, those sound nice. Tall phlox did beautifully last year, the first
time I've had them. It's a bit too early to begin actual planting here
yet.

We're trying to get ready to finish the renovation on this house. We're
both sick and tired of living in sawdust. Hopefully we'll be done by the
end of the summer. I'm going to turn one entire side of the yard, the only
one that gets sun, into a veggie garden next year.

OMG, I know exactly how you feel! I've also been renovating my entire
house, inside and out. Its looked like a construction zone for so long
now that it will be like heaven when its complete! No more stepping
over tools and around saw horses and such. Clean floors again!

Good luck and speed with your projects!

Yikes, you didn't wait long after the kitchen remodel to jump into
the rest of the house, I give you credit for having a lot more energy
than I do.

It's going to be nice, once you get the up front work done.
