Are homemade croutons better made with fresh bread or day-old bread?

I'm going to make the croutons tomorrow, and I wonder if it would be better to set my bread machine to make the bread I'll use today, so it can sit overnight, or tomorrow. Also, if it is better for the bread to sit for a while, would it be better to cube it into crouton shapes and let it sit that way, or let it sit as a loaf and then cut it into cubes?
