Are fries healthier when they are lightly cooked or well-done?

I love this restaurant in the southwestern US called In-N-Out, and they have 4 ways of cooking fries: Light, Plain, Well, and Extra-Well. Light is cooked for a lower amount of time for a softer fry, and well is cooked for a larger amount of time, for a crispy fry. Extra-well is really, really crispy, and of course plain is plain. I like Light, Plain, and Well, but I was wondering if one of them has some health-advantage over the other. They're all freshly sliced potatoes in 100% fat free vegetable oil. I know that it isn't healthy overall, but what is the least un-healthy?
