Are extracts used in baking Halal (Peppermint, Vanilla)?

Asalaam Alaikum WRWB,

I recently discovered that peppermint extract (used for sweets, coffee etc) is made of a high % of alcohol..so that makes me think it's not halal....is that correct? Do any sisters know if there are substitutes?
