My cookbook only lists four nutrients that are present in a raw green pepper:
Fiber: 3g, 12% of Daily Value
Vitamin C: 129mg, 215% of Daily Value
Iron: .6mg, 3% of Daily Value
Calcium: 14mg, 1.4% of Daily Value
Also, it has 25 calories, which are 1.3% of daily calorie intake. (All this is based on 2000 calorie diet.)
So, once I cook the peppers, what will be left? I know they lose some nutrients when I cook them, but what nutrients? Is a recipe with cooked green peppers any healthier than a recipe without?
