Well, these girls aren't transforming into things, but:
I guess you could mention the Sailor Scouts and the girls from Winx Club (who are technically only changing their clothes when they transform), or the Guardians from W.I.T.C.H., who when they transform, appear to age into 18-20-year-olds.
And of course, Cutey Honey.

I can't help but wonder where some of these fetishes originate. Of course, I have one of my own (and anyone who's seen much of my art knows what it is), but I don't treat it as a fetish - I give it a legitimate reason for being in my work, and I don't create it for sexual purposes. That way, I figure I run a smaller risk of making people uncomfortable, as other folks' fetishes tend to do.
