Any suggestions on what to cook for dinner tonight?

Planning on maybe having spaghetti for dinner tonight, but can't decide on a side. Maybe fried squash, maybe corn on the cob? Not a salad, I know. Any suggestions?
Tom, sounds great, but don't have those ingredients on hand. Would need to get pepper jack cheese and stove top stuffing mix. Would rotel tomatoes work in this?
 
Are you open to other ideas?

Spicy bruscetta chicken bake

You can make this non-spicy by using regular diced tomatoes, leaving out the red pepper flakes and substituting the pepper jack for Monterey or mozzarella

Ingredients
1 1/2 lb. boneless skinless chicken breast cut into bite-size pieces
1 cup shredded pepper jack cheese
1 14 1/2 ounce can diced fire-roasted tomatoes
1 6 ounce package Stove Top for chicken
1/2 cup water
2 cloves garlic, minced
1 tablespoon Italian seasoning, Dell'Aple recommended
Big pinch kosher salt
Pinch red pepper flakes

Method
Heat oven to 350 and spray a 9 x 13 pan with Pam

Lay the chicken in an even layer in the bottom of the pan and sprinkle with the cheese.

Mix tomatoes, stuffing mix, water, garlic, Italian seasoning, salt, and red pepper flakes together until stuffing mix is moistened. Mound the stuffing mixture on top of the chicken and the cheese in an even layer. Bake 30 minutes or just to the point when the chicken turns opaque.
