Any recommendations on how to cook chicken so that it's flavorful & tender?

I am a cook in progress... but still learning my technique... tonight i will be making some green chicken enchiladas and i want my chicken to be tender & tasty. For some reason my chicken always comes out a little dry/rubbery.... any suggestions??
 
Yea, in a slow cooker like a Crockpot, meats turn out real tender and juicy--it just takes like 15 hours! You can probably also steam chicken. If you rotisserie or bake a whole chicken, they seem to stay juicier (individual pieces probably can't retain the moisture as well as a whole chicken). You can also get good results in a pressure cooker which takes far less time. Don't overcook chicken (turn off the heat about 5-10 mins before it's done because the interior of the chicken will continue to cook).
 
I make chicken enchiladas all the time, it is extremely easy! There are two different ways.you can sear it in the pan until it is cooked through, then pull it apart so it looks like it has been shredded kind of, then you place it in your tortillas and pour sauce on top of it, or you can take your enchilada sauce and put it in a pot and add the chicken, along with any other seasonings. I sometimes add corn or kidney beans, then take that and fill the tortillas. email me if you need anymore help!

edit: also use chicken breast. If it is frozen let it thaw out naturally under some warm water, don't microwave it.
 
it's up to you to season the chicken BEFORE you cook it. season inside and out even if it's only salt and pepper. buy a bird that has a pop-up timer that will tell you when the bird is done. Purdue chickens i think. 325 degree's follow the directions that come with the bird.
a handy cookbook with a lot of good, down to earth ideas for beginners is BETTY CROCKER. reasonably priced and
you don't need a lot of exotic spices etc. down to earth cooking.
you might also consider covering the top of the chicken with aluminum foil for the first 1/2 of the recommended cooking time, then remove the foil so the chicken will brown. the foil will help to keep the juices inside the chicken.

I put the chicken (usually use the boneless skinless breasts) into a baking dish with butter. Salt Pepper and Garlic (you can use any spice really) and cover with tinfoil. Then, I cook in the oven at 250 degrees for about an hour and a half maybe 2. Very moist tender and good flavor!
