I've been getting a bunch of tomatoes from the farmers market lately and making some great pico de gallo. Now I'm ready to step it up into salsa. I'm looking for a basic table salsa, like what you would find at a restaurant. Those are cooked a bit, aren't they? I don't want it super chunky, but not all watery either. Last time I was told to food process the salsa to make it less chunky, but I ended up just liquefying the tomato and everything was watery. Not what I wanted. Anyway, if you have some nice salsa recipes to share I'd appreciate it. Preferably with some heat to it.

I've tried that. I get a bit overwhelmed by all the choices and I'd prefer to get a recipe that someone can vouch for and tell me is great.
