A few photography questions...?

I'm new at this, so i have a few questions i have answered after a friend of mine showed me a few things on my camera yesterday.

-She shoots in raw, sends it to lightroom to tweak a little, then moves it to photoshop as a jpeg because apparently it will only take it in jpeg? She said raw sends more info so you can tweak it more, can someone explain this a little more and if it is something done a lot or just her? I know some people arent very into the really edited ones but they are what is popular now and i really like the looks of them so plan to get better at this myself.

-What is the difference between nikon and canon in easy terms? Is there really a difference? I tried to search it but didnt find much except really technical terms and still ended up with nothing.

-Does anyone know the best lens that would fit what i need: I mainly want to take portraits for family and friends. It is a hobby for me, but want them quality so that people would WANT me to take them for their family (maybe eventually by word of mouth to strangers). I will also take random shots on like vacation and stuff. I have a Rebel XTi and plan to get a better one "down the road" but want the lenses to be able to switch so i think i am staying canon. I just have the kit lens right now like 18-55 and the f stop just goes to 3.5 and i want it lower. Sorry i am not a pro so i hope that was enough info. I tried my friends (she had the one with the red line on it which she said was like $1500 and it made a BIG difference actually) so i am looking for one that i can see a big difference but isnt too spendy because i am 23 with a baby that had some medical issues we are still paying for and husband in school so extra cash isnt really easy to come by haha- we could probably only spare a few hundred tops but the lower the price the better obviously.
