Hi BU, I am not Asian,though I do have experience with food.Yes you can,I've done it before. Once you get past that they look different,there is not a great deal of difference in the overall taste if you are adding a sauce. If using as a stir fry noodle just make sure they are completely cold before adding to the wok or they may stick. As you will know the majority of Chinese noodles are egg noodles and the cheaper branded 'Italian style' noodle may not have egg that basically is all that is different. They may be slightly heavier though. I'm sure you probably had pasta with and without meat so you will know the textures etc.
