Hi folks.

I'm wondering if the organizer features such as the "calendar" and "tasks" would work if you were not subscribed to a phone service? I'm guessing maybe they wouldn't as the phone gets it's time from the cell tower?

No, you don't need an active SIM card to use the W810i. You can still use everything else, you just won't be able to send receive calls, etc.
