600cc or 1000cc for first sport bike?

I'm 20 years old, 6' 3" 210lbs. I'm riding for about 3 years now, all the time on a '07 kawasaki 250R. I am now looking to buy my first real sport bike. Advice from some motorcycle enthusiasts suggest that I should go the liter bike route because of my size, but I'm a bit worried that the big bike won't handle as well as the 600. The bike will mostly be used for canyon blasts and hopefully track days.

Suggestions on what make of bike to get will also be appreciated.

You have been riding for 3 years, you should know what you like. Go test ride a 600 and 1000 back to back and see which one you like. Heck ride a few of them before you decide.
