In no particular order some bikes which would fit into the general intention of the thread are:
1975 to 1979 SS Ducati
750 GT Ducati (early '70s)
750 Sport Ducati (early '70s)
851 tri-colour Ducati (especially the kit bike)
851 SP3 Ducati
750 F1 (1986, Laguna Seca, Montjuic, Santa Monica)
Honda RC30
Laverda SFC 750 (although it may now be getting past the $40K mark)
Bimota DB1
Bimota SB2
F4 oro MV Agusta
F4 Tamburini MV Agusta (may still be above the $40K price)
TT2 Ducati (factory customer race bike)
Almost all of these are riders on the road and are currently appreciating in value. All also fit into the sport bike category and most would be fun rides. Just don't buy low km (under 1000 kms) bikes 'cause you just won't ride them.
