2005 Jeep Wrangler TJ wheel and tire question?

I have a 2005 Jeep Wrangler TJ Rocky Mountain edition, with 15" wheels and 30" tires with a 4.0L engine(no lift, all stock). I have purchased the 16x8 Moab wheels that come stock on the Rubicon TJ's. I am going to use all terrain tires, but being my only auto, it will be primarily used on the highway, so ride comfort and gas mileage is important. Will I need backspacers? If so, what size. Also, what size tires can I run without a lift kit? I have read that the stock tire size on the Rubicons are 245/75/R16's, but what is the actual height of this tire? Is this tire taller than my 30" tires that I currently have? How large of a tire can I fit without any handling or rubbing issues?
