2003 Volkswagen Jetta GLI. When taking off, brake light flashes and makes a chime.?

I definitely know that it is not that i have the e brake up and also because it makes a totally different chime like when the washer fluid is out. It only used to do it when I would hall ass to avoid wrecking, but now does it more often.

You should still check the brake fluid level. Put it on a scanner to find out what is making the light flash & the chime come on.
