2002 Ford E350 5.4L "check oil light on"?

Noticed the check oil-light came on. Changed oil/filter 500 miles ago. I checked oil level, and its full. Just added coolant to reservoir which was empty, but full when I did the oil change. Noticed the oil gauge acting up. When I accelerate, the oil gauge needle shoots up higher, and when I brake, the needle drops all the way down. What could be the problem?
 
Do you have an oil gauge which shows actual oil pressure? or just an oil gauge activated by a switch? If you do have an oil gauge and if it's the electrical type, check out the sending unit.
