Yes you can remove your saved games file before you uninstall, then just put it back when you reinstall it... But this sounds like an issue with your graphic card, so uninstalling and reinstalling in all likelyness won't help.. Sounds like your card is on the verge of biting the dust.

If you're talking about buying it, get Madden.. Army of Two is only good if you have someone to play with, Madden you can play by yourself and no game is ever the same... Where as with Army of Two, everytime you go throught he storyline, it'll pretty much be the same exact thing.
