    How do I cook Plantains so that they are edible?

    If they are more than 93-percent green on the outside, you can slice and fry them exactly like potato-based fries, except you won't need to blanch. Chips of these are also nice. One advantage of plantains, is that they don't have as many blemishes as potatoes. The yellowish (outside) ones...
