    Can I prepare, then freeze, then later cook/serve homemade egg rolls?

    Yes you can. Oven temp should be 425F for 10-15 minutes. Make sure that you saute your vegetables that you are going to use and let them drain before rolling into the dough. If you dont, ice crystals will cause alot of trouble and the egg roll will remain soggy.
