dredge in flour, place meat side down in hot grease till brown flip over and cook outside. with hot grease, whole process should take less than 5 min. trout is a very lean, thin fish.
usually all they do is seat customers and assign them to a server. every rest. is different. they may have side work i.e. roll silverware, vacuum, take reservations, but it is a simpleton's job
