It will work. The O2 welcome screen is part of the 'phone's branding, it must have been sold on this network originally e.g. my phone has a Vodafone section in the menu screen which would remain even if I unlocked the phone and used it on Orange. If you are using T-Mobile now it will carry on...

It depends on the Post Office. The larger ones have a system where they check the insurance policy number so that would be fine.
