I'd make a pot roast with baby carrots, small red potato's and pearl onions. In my old roasting pan. No need for any cutting. Just put the roast in the pan salt and pepper to taste, add the baby carrots and washed red potato's add a bit of water and if wanted a beef broth bullion cube cover and stick it in the oven. Roast on 350 until meat is done and potatos are tender, about 2 to 3 hours.
